Ingredients:
- 2 eggs (large)
- ½ cup parsley
- ½ cup parmigiano
- 1 cup creamed corn
- 1 cup corn kernels
- 1 cup baby spinach
- 2 cups self-raising flower
- 2 broccolini
- 4 asparagus
- 1 brown onion
- 1 garlic clove
- Salt
- Pepper
Recipe:
- Heat cooking oil in a pan on low heat
- Chop garlic and onion
- Cook until lightly golden
- Chop and add asparagus
- Cook for 5 minutes
- Remove pan from heat and transfer contents to large bowl
- Add flour, eggs, creamed corn, corn kernels, spinach, parmigiano and parsley to bowl
- Mix ingredients until well combined
- Heat oil in frypan until it bubbles, then turn down to medium heat
- Spoon mixture in (one-by-one) and cook on either side
- Remove when golden-brown
