Corn and Green Fritters

Ingredients:

  • 2 eggs (large)
  • ½ cup parsley
  • ½ cup parmigiano
  • 1 cup creamed corn
  • 1 cup corn kernels
  • 1 cup baby spinach
  • 2 cups self-raising flower
  • 2 broccolini
  • 4 asparagus
  • 1 brown onion
  • 1 garlic clove
  • Salt
  • Pepper

 

Recipe:

  1. Heat cooking oil in a pan on low heat
  2. Chop garlic and onion
  3. Cook until lightly golden
  4. Chop and add asparagus
  5. Cook for 5 minutes
  6. Remove pan from heat and transfer contents to large bowl
  7. Add flour, eggs, creamed corn, corn kernels, spinach, parmigiano and parsley to bowl
  8. Mix ingredients until well combined
  9. Heat oil in frypan until it bubbles, then turn down to medium heat
  10. Spoon mixture in (one-by-one) and cook on either side
  11. Remove when golden-brown
  12. Enjoy!
